Paellas And Tapas was founded by head chef Manuel Martinez, who grew up in Madrid and learned to cook paella from his mum and grandmother. Based in Carlisle, the team brings authentic Spanish food to events across Perth, using quality ingredients, many sourced from Spain where possible. Their paella pans and burners are made in Valencia, Spain, and the paella is cooked outdoors in full view of guests, so the cooking becomes part of the entertainment.
For weddings, Paellas And Tapas offers taster sessions so couples can sample the paella and tapas range and plan their menu with confidence. Paella choices include seafood, chicken and vegetarian, and every paella is gluten free, while the vegetarian paella is also vegan friendly. Traditional tapas such as pintxos, croquetas, albondigas, tortilla, patatas bravas and jamon serrano can be added for guests to enjoy as they arrive and mingle.
The team is self sufficient, needing only a flat, covered area of around two by three metres for the paella station, plus power for evening events, with no kitchen or wash facilities required. They arrive early to set up, and biodegradable plates, plant based forks and napkins are supplied. Glassware and other equipment can be arranged through their hire partner, and every staff member is trained by Manuel.
